Places I go for my hunter and pally are:
Hunter Forums: http://tkasomething.com - tends to be friendlier than EJ
Online thingy: http://www.femaledwarf.com - really useful for seeing impact of changing gear, spec, gems, pet etc... Hunter only though, Rawr apparently is similar for other classes but really used.
Paladin Forums: http://maintankadin.failsafedesign.com - Is mainly for tanking, but there are guides and things for most questions, nice, helpful people.

Mages: www.eu-armory.com Check paragon, check their mages, try to copy gear, use rawr to see the improve of dps changing pieces of gear, forget about elitistjerk for mages, they dont have a clue :P and i dont really like that web anyway ^^
P.S Open eyes, pay attention on mana, ab charges, and am procs, delete all mage helper addons, try to move the less u can (as long as u dont stay on dmging things), and use blinks as often as needed, do it by urself, maybe bosskillers or something like that if u need it.

I'm sure most Hunters already know about petopia. Its a really good website for looking up information on pets and also features info about pet talent trees etc. A good website.

The warcraft hunters union is kinda like a blog that everyone takes part it. There's some really useful information to be found here. Its worth a look.

there used to be an irc channel for like druids, had a lot of the so-called 'famous' druid players in europe, but I can't seem to find it at all anymore. But ya, is it just website or can we put chat thingys too?

K so I fail at finding shaman stuff, but that just means shamans fail and the druid community is like way better, not that my skills in finding thins stuff suck. Mm hmm.
Balance druid blog! Seems good. First link is a post to his various balance druid tips in ICC, HM orientated. Kinda makes me want to play a balance druid to try them out! I'm sure some of the things are applicable to other classes too, so.
